In the past few years, I've eaten about 50% of my toast this way. In Costa Rica, rice and beans is called "Gallo Pinto," and it's cooked with a famous (at least here) sauce called "salsa Lizano." It's often served with heavy sour cream called natilla on the top. In this case, I accompanied my gallo pinto with an omelet and a bit of tomato.
